On arriving at Pares Resort in Phuket, we took a few moments to admire our breathtaking villa (see here!) before enjoying a colourful tapas lunch at their restaurant Diavolo. In all honesty, the photos really do speak for themselves – the plates were simply beautiful! 

Below is the refreshing ceviche which was served in a passion fruit shell.


Followed by the Baba Ganoush with pomegranate, walnuts and warm pita bread.


…and these ‘Mini Bombs’ which were filled with spicy sweet potato and bacon (win!)



Despite the fact that we were very clearly full from those delicious offerings, it didn’t stop us from sampling the desserts too. We decided on the Banoffee and Lemon, Orange and Chocolate tart (note how hot is was, it started melting within seconds of reaching the table!).



Our lunch at Diavolo was spectacular. The colours, tastes and the stunning scenery made it a very memorable afternoon and a fantastic start to our dreamy stay at Paresa.
